A Tribute to the best Sheppard's Pie in the World

Ingredients

  • 1lb Organic Beef Mince
  • 1tbsp Olive Oil
  • 1 lg White Onion
  • 1 lg Red Onion
  • 4 Cloves Garlic
  • 1/2 Bottle of Merlot
  • Table Salt
  • Rainbow pepper
  • 2 tsp Tabasco Sauce
  • Italian Mixed herbs
  • 3 Bay Leafs
  • 2 Oxo cubes
  • 2/3lb white cooking potatoes
  • 1/2pt Milk
  • 1/4lb Mozzarella Cheese
  • 1/4lb Cheddar Cheese
  • Cornflower as required

Method:

Firstly dice both Onions and retain 1/3 of each, heat olive oil in large frying pan and add Onions, whilst frying them of to a translucent state, Mince the garlic and then place that in the pan also. Add salt and pepper for effect.

Take your mince and cook of until Brown, once brown strain of the liquids into a Jug and retain. Add 1/4 bottle of wine to the pan and turn the temperature up until the liquid is simmering, place a lid on the pan for a while. When the wine is reduced, add the rest of the bottle with Tabasco sauce, Italian mixed herbs (2tbsp), bay leaves and the one OXO cube.

Preheat your oven (gas mark 8)

Next:

Cut potatoes into 1" cubes, and place in boiling water until boiled and fluffy, strain of the water, and mash the potatoes, incorporating the milk salt and pepper and grated Mozzarella cheese.

Put the Mince mix into a large oven proof dish then add the Cheesed Potatoes on top spreading thickly, Grate the cheddar and sprinkle over the top of the potatoes.

Finally:

Put the Pie into the oven and remove it when the Top is a deep golden brown.

into a pan place your Stock and bring back to the boil (add some extra wine if you need to, also add your onions and bring back upto a rolling boil, thicken with a little bit of cornflower, there is your Gravy.
