Rosemary Roast Potatoes

1lb of Ananya potatoes
1 large (extra large) spray of Rosemary
Lard
Salt
Pepper
Chilli Flakes.

Quarter the potatoes add to a pan with a pinch of salt, Par boil until soft but not fluffy.

Take a baking tray, put in some lard (Use your common sense here) Too little and they will not go golden to much and you might as well have fried the end result. Put it in an oven at gas mark 6, when the potatoes are parboiled strain them off (make sure to shake all excess water off otherwise you will make the Lard Spit). Put the Potatoes on the baking tray, make sure the potatoes are covered in a thin film of oil, Season with salt and pepper, cover the whole lot in rosemary, add chilli flakes if you wish. after 1/2 hour turn the potatoes, then put back into the oven. when the potatoes are golden brown, serve.
